Ingredients:
- 10 oz chocolate chips
- 1/2 cup peanut butter (the recipe said creamy, but I used chunky and it worked just fine)
- 8oz cream cheese
- Coconut
- Chocolate sprinkles
- Red & White Sprinkles (it was for Valentine's Day after all!)
- Chopped peanuts
- In a mixer beat cream cheese until smooth.
- Meanwhile in the microwave melt the chocolate (I suggest melting in 30 second increments to avoid burning the chocolate). Once melted stir in peanut butter until incorporated.
- Pour chocolate peanut butter mixture over cream cheese and stir until well mixed. Chill in the refrigerator for a few hours.
- Roll into balls, and then coat with your favorite toppings. I used chocolate sprinkles, red & pink sprinkles, coconut and crushed peanuts. Since I was bringing these to work, I put then in mini cupcake liners to make them easier to serve. Bakerella had some other great ideas too. Be sure to check them out!
