Valentine's Day Treat

I was looking for something different and simple to make for Valentine's Day. I found a recipe on Pinterest from Bakerella and adapted it to use with Velata chocolate. They were a hit at work and I will definitely be making these again!


Ingredients:
  • 10 oz chocolate chips
  • 1/2 cup peanut butter (the recipe said creamy, but I used chunky and it worked just fine)
  • 8oz cream cheese
Coating (be creative!). I used the following:
  • Coconut
  • Chocolate sprinkles
  • Red & White Sprinkles (it was for Valentine's Day after all!)
  • Chopped peanuts
Directions:
  • In a mixer beat cream cheese until smooth.
  • Meanwhile in the microwave melt the chocolate (I suggest melting in 30 second increments to avoid burning the chocolate). Once melted stir in peanut butter until incorporated.
  • Pour chocolate peanut butter mixture over cream cheese and stir until well mixed. Chill in the refrigerator for a few hours.
  • Roll into balls, and then coat with your favorite toppings. I used chocolate sprinkles, red & pink sprinkles, coconut and crushed peanuts. Since I was bringing these to work, I put then in mini cupcake liners to make them easier to serve. Bakerella had some other great ideas too. Be sure to check them out!
